It shouldn’t be, but, it was a hard decision for me to take a trip to Iceland now. Partly because of COVID and partly because it would put me further behind on my home projects. It may be hard to believe …(for those who know me) but I was going to attempt to be disciplined…stay home and get things done…and to forego an adventure. Yep, I said it, forego an adventure…ha ha ha! Part of me was proud of myself for that (short lived) decision. I knew breaking the news to Nik wouldn’t be easy…he’s persuasive! I was resolved to stand firm, remain focused. I called him and within the hour I was booking a flight.

After flying into Keflavik International Airport, Mummi picked me up at the bus station since I had several hours until Nik flew in and we started the drive up North. It was wonderful catching up with Mummi and reminiscing about our 2017 trip to Svalbard. Ulrika was able to meet up with us for a quick minute too!
Nik persuasive? Yes! While in Estonia he meets up with his former student Matthias, and in less than 24 hours convinces him to pack his bags and join him on the returning flight to Iceland where Matthias will be cooking in one of Nik’s restaurants, Eyri in Hjalteyri.
